Ett trevligt recept för många. Välj mellan att ha kycklingfiléer eller en hel kyckling (tupp är svårt att hitta). Vi hade både kycklingfiléer och kycklingdelar. Man få komma ihåg att ta bort prästens näsa (The Vicar's nose på engelska)som en av mina deltagare kallade den delen.

Knaprigt, stekt sidfläsk till coq au vin på kycklingfilé. Charmant och trevlig kycklingrätt med rödvin, vitlök och champinjoner. Med kokt potatis eller ris får du en utmärkt middag.

Detta är ett recept från Buffé nr 10, 2001.

Ingredienser

 
 

 

  • 500 g kycklinglårfilé eller kycklingfilé av bröst
  • 1/2 tsk salt
  • 1 krm svartpeppar
  • 100 g rökt sidfläsk eller bacon (100 g sidfläsk motsvarar 1 paket bacon à 140 g)
  • 2 schalottenlökar
  • 2 vitlöksklyftor
  • 1 purjolök
  • 150 g champinjoner
  • smör till stekning
  • 3 dl rödvin
  • 1 dl vatten
  • 2 msk kycklingfond
  • 1 msk soja
  • 3 lagerblad
  • 1 tsk timjan
  • 1 tsk maizena

Till servering

  • kokt potatis

Så här gör du

Bra att veta när du ändrar antalet portioner

Detta recept är gjort för 4 portioner. När du ändrar antalet portioner så ändras också mängden i ingredienserna. I vissa fall kan detta resultera i att tillagningstiden behöver justeras.

  1. Skär kycklingen i stora bitar och krydda med salt och peppar. Strimla fläsket. Skala och dela lökarna. Grovstrimla purjolöken och dela ev svampen.
  2. Bryn kycklingen runt om i smör och lägg över den i en gryta.
  3. Häll på vin och vatten. Tillsätt fond, soja, lagerblad och timjan. Låt koka ca 5 minuter under lock.
  4. Stek under tiden fläsk, lök, purjolök och svamp. Lägg ner det i grytan och låt koka i ytterligare 5 minuter.
  5. Rör ut arrowroten/maizenan i lite vatten och rör ner det i grytan. Låt koka upp.
  6. Servera med kokt potatatis.

  • 4 1/2 dl vetemjöl
  • 1 dl socker
  • 200 g margarin
  • Att doppa kakorna i:
  • 3 msk socker
  • 1 1/2 tsk kanel

Gör så här

  • Sätt ugnen på 175 grader. Blanda mjöl och socker. Skär margarinet i små bitar. Rör ihop mjöl, socker och margarin. Gör runda bollar av degen, platta till bollarna. Doppa kakorna i kanelsocker-blandningen. Lägg kakorna på en plåt med bakplåtspapper på.
  • Baka kakorna i 10 min.

Jag känner en underbar grupp kvinnor de flesta amerikaner som organiserar en Cookie Exchange varje år i Karlstad. Man samlas hemma hos någon och man tar med sig kakor man har bakat. Sedan byter man cookies med varandra. Jag tycker att det är en fin tradition bara lite synd att jag har missat den så många gånger. Cocoa Orange Truffles

These cocoa-dusted truffles hold a velvety orange-scented chocolate ganache. For a kid-friendly version, substitute orange juice for the liqueur. If the chocolate filling gets too soft when you're shaping it into balls, refrigerate it for a few minutes.

Tempering chocolate takes time, patience and a candy thermometer, but it gives beautiful results. The chocolates become smooth and shiny, and yield with a satisfying snap when you bite into them. Use the best quality chocolate you can find for these indulgent treats, and your favourite liqueur for the ganache centres. Frangelico, Kahlúa, Tia Maria and amaretto are good options.

Later this month, French actress Catherine Frot will be whipping up all kinds of decadent gourmet delicacies as the President’s personal chef in Haute Cuisine, a semi-biographical tale based on the life of Danièle Mazet-Delpeuch and her two-year stint in the Palais de l’Elysée. To celebrate the movie, we’ve picked out an easy-to-make dish straight from Ms. Delpeuch’s personal memoir along with six other mouth-watering cinema-inspired French recipes

2 1⁄4 lb potatoes, peeled
5 tbsp goose or duck fat
6 cloves of garlic (chopped)
Pinch of sea salt
Pinch of ground peppercorns
Parsley, for garnish

Slice potatoes as thinly as possible, no more than 1⁄4 inch thick.

  1. Melt 2 tbsp of goose or duck fat in a large saucepan, adding potatoes and a pinch of 
salt once hot. Allow to simmer for 30 minutes, turning occasionally with a spatula.
  2. Add in an additional 1 tbsp of goose or duck fat, along with chopped garlic, and cover 
for 2-3 mins or until browned.
  3. Serve potatoes sprinkled lightly with salt, ground pepper, and parsley.


STEP UP TO THE PLATE
 (Watch Instantly on Netflix) – A documentary of the year leading up to renowned chef Michel Bras’ handing over the reins of his three-star hotel-restaurant in the Aubrac Mountains to his son Sébastien. 

Mushroom Soup With Toasted Bread (by Michel Bras courtesy of Food & Wine, serves 12) is rich in flavor thanks to a special Bras family trick.

Food and Wine
Three 1/2-inch slices of sourdough bread (6 ounces), crusts removed
4 tablespoons unsalted butter
1 1/2 pounds white mushrooms, coarsely chopped
2 Portobello mushrooms—stems discarded
black gills reserved for garnish, caps coarsely chopped
2 large garlic cloves, thinly sliced
Salt and freshly ground white pepper
6 cups vegetable broth or water
3/4 cup heavy cream
12 dill sprigs

  1. Preheat the oven to 300°. Bake the bread slices on a baking sheet for about 1 hour and 40 minutes, until deeply browned.
  2. In a pot, melt the butter. Add the mushrooms and the garlic; season with salt and pepper. Cover and cook over moderate heat, until the mushrooms are softened, 5 minutes. Add the broth and 1/2 cup of the cream; bring to a boil. Cover and simmer until the mushrooms are tender, 10 minutes.
  3. Add the toasted bread to the soup; simmer until softened, 5 minutes. Working in batches, puree the soup in a food processor. Return the soup to the pot, season with salt and pepper and keep warm.
  4. In a saucepan, bring the remaining 1/4 cup of cream to a boil. Remove from the heat; whisk until frothy. Ladle the soup into bowls, top with the frothed cream, garnish with the dill and Portobello gills and serve.

Chatelaine

¼ cup extra-virgin olive oil
1 large onion, chopped into chunks
3 garlic cloves, minced
1 small red bell pepper, cut into 1-inch squares
1 small yellow bell pepper, cut into 1-inch squares
1 small green bell pepper, cut into 1-inch squares
1½ pounds fresh tomatoes coarsely chopped (leave in skins and seeds) 
1 small can tomato paste
½ teaspoon dried thyme
½ teaspoon dried rosemary
1 teaspoon dried basil
1 dried bay leaf
1 teaspoon salt
½ teaspoon pepper
1 medium eggplant, unpeeled, cut into chunks
2 average zucchini, unpeeled, cut into chunks

Heat oil in a large pot with a heavy bottom over medium heat. Add onions and sauté until translucent, then add garlic and cook for an additional minute. Once onions are a light golden color, add peppers and cook for five minutes. Mix in tomatoes, tomato paste, thyme, rosemary, basil, bay leaves, salt and pepper. Then add eggplant and zucchini and cook for about 5 minutes.

Reduce heat to low, cover and simmer until vegetables are tender -- about 30 minutes. Remove bay leaf and enjoy!


VATEL
 (Watch Instantly on Netflix) – Stars Gérard Depardieu as the real-life 17th century chef and royal party planner credited for creating whipped cream. The film focuses on Vatel’s meticulous preparation of an over-the-top banquet held in honor of The Sun King at the Château de Chantilly.

Sole Meunière (courtesy of Barefoot Contessa on the Food Network,serves 2) was on Vatel’s menu, but when the stressed-out chef feared that there wouldn’t be enough fish for the King’s extravagent feast, he took his own life. Talk about a dish to die for…

an educated plate

1/2 cup all-purpose flour
Kosher salt and freshly ground black pepper
4 fresh sole fillets, 3 to 4 ounces each
6 tablespoons unsalted butter
1 teaspoon grated lemon zest
6 tablespoons freshly squeezed lemon juice (3 lemons)
1 tablespoon minced fresh parsley

Preheat the oven to 200 degrees F. Have 2 heat-proof dinner plates ready 

  1. Combine the flour, 2 teaspoons salt, and 1 teaspoon pepper in a large shallow plate. Pat the sole fillets dry with paper towels and sprinkle one side with salt.
  2. Heat 3 tablespoons of butter in a large (12-inch) saute pan over medium heat until it starts to brown. Dredge 2 sole fillets in the seasoned flour on both sides and place them in the hot butter. Lower the heat to medium-low and cook for 2 minutes. Turn carefully with a metal spatula and cook for 2 minutes on the other side. While the second side cooks, add 1/2 teaspoon of lemon zest and 3 tablespoons of lemon juice to the pan. Carefully put the fish filets on the ovenproof plates and pour the sauce over them. Keep the cooked fillets warm in the oven while you repeat the process with the remaining 2 fillets. When they're done, add the cooked fillets to the plates in the oven. Sprinkle with the parsley, salt, and pepper and serve immediately.

SABRINA (Rent the DVD on Netflix)— In this Billy Wilder romantic comedy, Sabrina (Audrey Hepburn) is the daughter of a poor chauffeur who is hopelessly in love with one of her father’s clients, womanizer David Larrabee. In attempt to get over David, Sabrina travels all the way to Paris where she learns the art of French cuisine and French sophistication.

The Classic Soufflé (by Michelle Southan at taste.com, serves 4). Sabrina fails miserably at preparing this puffy pastry because, according to her cooking partner, “A woman happily in love, she burns the soufflé. A woman unhappily in love, she forgets to turn on the oven.”

Melted butter, to grease
Dried (packaged) breadcrumbs, to dust
50g butter
40g (1/4 cup) plain flour
250ml (1 cup) milk

120g (1 1/2 cups) coarsely grated vintage cheddar
4 eggs, separated

1. Preheat oven to 190°C. Place a baking tray in oven. Grease a 1.5L (6-cup) capacity ovenproof dish with butter. Dust with breadcrumbs. 

2. 
Heat butter in a saucepan over medium heat until foaming. Cook flour, stirring, for 2 minutes or until it bubbles and comes away from the side.

3. 
Remove from heat. Gradually whisk in half the milk until mixture is smooth. Gradually whisk in remaining milk until smooth and combined.

4. Whisk over medium heat for 3-4 minutes or until sauce boils and thickens. Add cheddar and stir until cheddar melts and mixture is smooth.

5. 
Remove the saucepan from heat. Quickly whisk in the egg yolks until well combined. Transfer the mixture to a large bowl. Use an electric beater to beat the egg whites in a clean, dry bowl until firm peaks form. Be careful not to overbeat the egg whites.

6. Add one-third of egg white to cheddar mixture. Use a large metal spoon to fold. Repeat, in two more batches, with the remaining egg white.

7. Spoon into prepared dish. Run your finger around the inside rim of the dish. Place on preheated baking tray. Bake for 25-30 minutes or until golden.


CHOCOLAT(Rent the DVD on Netflix) – In this romantic film based on Joanne Harris’s book of the same name, Juliette Binoche plays Vianne, a chocolatier whose new shop full of sinful delights scandalizes the religious members of her quaint traditional French town.

Vianne's Spiced Hot Chocolate (from Joanne Harris’s book The French Kitchen, serves 2) brings some much needed heat back into Vianne’s landlord’s frosty life (played by Judi Dench).

1/2 vanilla bean, cut in half lengthwise
1/2 cinnamon stick
1 hot red chile, halved and seeded
3 1/2 ounces bittersweet (70 percent) chocolate Brown sugar to taste (optional)
Whipped cream, chocolate curls, cognac, or Amaretto, to serve

Place the milk in a saucepan, add the vanilla bean, cinnamon stick, and chile, and gently bring it to a shivering simmer for 1 minute. Grate the chocolate and whisk it in until it melts. If you must, then add brown sugar, but do try without it. Take off the heat and allow it to infuse for 10 minutes, then remove the vanilla, cinnamon, and chile. Return to the heat and bring gently back to a simmer. Serve in mugs topped with whipped cream, chocolate curls, or a dash of cognac or Amaretto.6) Serve warm with roast meats or place in a refrigerator to chill if serving as a dessert with whipped cream. 

 

MARIE ANTOINETTE(Rent the DVD on Netflix) – Set against a modern soundtrack of punk rock and electronic music, Sofia Coppola’s vamped up version of the Austrian Queen’s legendary life at Versailles takes us from her ascent to the throne to her struggles to produce an heir to her selfishly lavish spending that ignited the French Revolution.

Chocolate Macarons (from The Sweet Life in Paris by David Lebovitz, makes about fifteen cookies). While Marie Antoinette (Kirsten Dunst) found the rituals at the court tedious, unnecessary and stifling, she happily welcomed the fine food and fancy outfits. Coppola, therefore, littered the set with Ladurée Macaron pyramids in pastel shades to accentuate the Queen’s love of stylish pretty things.

Macaron Batter

1 cup (100 gr) powdered sugar
½ cup powdered almonds (about 2 ounces, 50 gr, sliced almonds, pulverized)
3 tablespoons (25 gr) unsweetened Dutch-process cocoa powder
2 large egg whites, at room temperature
5 tablespoons (65 gr) granulated sugar
½ cup (125 ml) heavy cream


Chocolate Filling


2 teaspoons light corn syrup
4 ounces (120 gr) bittersweet or semisweet chocolate, finely chopped
1 tablespoon (15 gr) butter, cut into small pieces

Preheat oven to 350º F (180º C). Line two baking sheets with parchment paper and have a pastry bag with a plain tip (about 1/2-inch, 2 cm) ready. Grind together the powdered sugar with the almond powder and cocoa so there are no lumps; use a blender or food processor since almond meal that you buy isn’t quite fine enough. In the bowl of a standing electric mixer, beat the egg whites until they begin to rise and hold their shape. While whipping, beat in the granulated sugar until very stiff and firm, about 2 minutes. Carefully fold the dry ingredients, in two batches, into the beaten egg whites with a flexible rubber spatula. When the mixture is just smooth and there are no streaks of egg white, stop folding and scrape the batter into the pastry bag (standing the bag in a tall glass helps if you’re alone). Pipe the batter on the parchment-lined baking sheets in 1-inch (3 cm) circles (about 1 tablespoon each of batter), evenly spaced one-inch (3 cm) apart. Rap the baking sheet a few times firmly on the counter top to flatten the macarons, then bake them for 15-18 minutes. Let cool completely then remove from baking sheet.

To make the chocolate filling: Heat the cream in a small saucepan with the corn syrup. When the cream just begins to boil at the edges, remove from heat and add the chopped chocolate. Let sit one minute, then stir until smooth. Stir in the pieces of butter. Let cool completely before using.

Assembly: Spread a bit of batter on the inside of the macarons then sandwich them together. Let them stand at least one day before serving, to meld the flavors. Store in an airtight container for up to 5 days, or freeze. If you freeze them, defrost them in the unopened container, to avoid condensation which will make the macarons soggy.

Jag testade att göra praliner med olika fyllningar i helgen.

Vit choklad med en lingon, röd vinskolasås, glögg kryddor blandat med en chokladtryffel.

Mörk choklad med en hjortron/choklad kola fyllning.

Ljuschoklad med en daimfyllning.

Det mesta sålde min son och sina kamrater för att samla in pengar för välgörenhet. De sålde slut på allt på mindre än 10 minuter otroligt!!

Under helgen hade jag en chokladverkstad i Ksrlstad med ett härligt gäng! Vi njöt verkligen av att gjuta skal göra olika fyllningar.
